The short version

As posted.

Is Singapore food really bland? Only 1 dish in 4 says so.

Char kway teow is the one. Singapore's is called bland three times as often as Penang's. Counting only reviews that judge the taste, it's still 1.5 times. Nasi lemak, chicken rice and bak kut teh are close.

Of 759 weak or mixed taste reviews, 14 reported too little salt. Most named the dish's own part: the wok hei, the rice, the soup.

Where I'd eat for the most flavour is in the slides. The full lists are on my site. Send it to the friend who says Singapore food is bland. Link in bio.

How I know: I had AI read 10,409 Google reviews of 534 places, pulled 18 October 2026. A second AI read had to agree. Malaysia means Penang for char kway teow, Johor Bahru for bak kut teh, and KL for the rest. Rounded down.

Can AI build a company? I think so. Follow along.

The full story

Is Singapore food really bland? It’s a common jab. In the Reddit comments I read for episode 1, 13 to 0 gave Malaysia the flavour. I asked AI to read 10,409 Google reviews of the same four dishes on both sides. Only one dish backs it up.

What I found.

The charts are free to use with a link to this page.

1. Of four dishes, only char kway teow is clearly blander in Singapore.

Char kway teow: 12% of Singapore reviews call it bland or lacking taste. Penang: 4%. That’s three times as often. Nasi lemak: 8% in Singapore, 6% in Klang Valley. Chicken rice: 5% and 5%. Both close.

2. Bak kut teh flips it.

Bak kut teh: about even on “bland” (7% against 8% in Johor Bahru), but Singapore’s is praised for a strong taste nearly twice as often (22% against 12%). The full bak kut teh fight is episode #7.

3. Singapore reviews talk about taste more.

Singapore reviews talk about taste more: 35% say how strong it is, against 26% on the Malaysian side. Counting only those, char kway teow is still called bland more in Singapore (24% against 15%).

4. When it’s bland, the dish’s own part is missing.

Of 759 reviews with weak or mixed taste judgments, 52% name the dish’s own part: the wok hei for char kway teow, the rice for nasi lemak and chicken rice, the soup for bak kut teh. 14 reported too little salt.

5. The reviews show a style difference, not a salt test.

Too salty comes up a bit less often in Singapore: 2.1 per 100 reviews in Singapore, 2.7 in Malaysia. Each side’s style: both praise char kway teow’s smoke, and Singapore’s is praised for being sweet too (13% of reviews, Penang 1%). On Reddit, 4 comments said Singapore holds back for health (“they think thrice before adding sugar/salt/msg”). That’s what they said, not something reviews can show.

Run a stall?

If customers call a dish bland, I’d taste its own part first, every batch: the wok hot enough to smoke, rice you can smell before the sambal, a soup that isn’t thin. A test, not a promise.

How I did it.

Google’s 20 most relevant reviews of 534 places known for nasi lemak, chicken rice, char kway teow or bak kut teh, in Singapore, Klang Valley, Penang and Johor Bahru, pulled 18 October 2026: 10,409 reviews. AI (Codex) read each review for how strong it finds the taste, what part lacked taste and which tastes it names, with a quote checked word for word. A second AI read judged every claim; only claims both agree on count (3341 of 4213 taste judgments).

What it can’t tell you.

We don’t know who wrote each review, a local or a visitor. Google’s “most relevant” reviews are longer than most. Each side’s places differ (Singapore’s are mostly hawker stalls). Reviews show what people say, not the salt in the pot. These go together; they don’t show what causes what.
